GABRIEL MARTIN - HADJ SADKI & THE FRENCH BRASSERIE.
A new restaurant is opening its doors in Melbourne . International talents Gabriel Martin and Hadj Sadki are now settled in Australia.
Having been trained at the tough schools of the Michelin stars restaurants , worked their way to the top , worked for other stars, they are taking stock with a new venture.
Gabriel is the guest chef for a special Banquet which will honour some of the great ancestors and founding members of gastronomy.
Le diner-banquet du 14 juillet rendra hommage à Carême , lui-même apprenti de Vatel, le grand Maestro des fourneaux de Talleyrand . Selon la petite histoire telle qu'elle nous est contée , Talleyrand et Vatel, s'unirent dans l'effort surhumain des négotiations entre les têtes couronnées victorieuses après Waterloo, et le ministre plénipotentiaire de la France occupée et vaincue. La légende dit que la hargne des têtes couronnées . succomba à la divine cuisine du grand chef, facilitant ainsi , la tâche ardue du négotiateur Talleyrand.

The Food and Wine Festival brings guests from all over the world , participants , publics and products from all over Australia.
It is a Festival , around the state, in many suburbs and around and in the culinary hub which is Melbourne .
Pour cette fête , plusieurs chefs étoilés ont été invités.
Au total : 31 étoiles Michelin ont préparé 13 banquets, donné quelques dizaines de démonstrations et master classes et ont enchanté un public averti, qui en redemandait.
Il faut dire que les Master Classes avaient été prises d'assaut depuis février.
L'art culinaire, la gastronomie , les nouvelles dimensions des produits et de ce qu'ils deviennent tout en gardant une saveur qu'on connaît, émerveille.
Ce qui étonne par dessus tout c'est l'extraordinaire vision de ces grandes toques , qui ont vécu plusieurs vies, se sont ré-inventés au fil de leurs rencontres et de leurs inspirations, et de la poésie qu'ils véhiculent quand ils parlent de leur art.
D'ailleurs ils ne le voient pas comme tel. Pour eux ils s'agit du moment , saisi au vol , d'une inspiration, d'un évenement. Ecoutez le récit de Jean-Paul Jeunet , quand il revient sur " Le meilleur repas qu'il ait jamais créé.

Another excerpt of a very long interview with Thierry Marx, pictured, one of the international guests of the Melbourne Food and Wine festival. He is one of the most renowned chef in France.
He is a regular visitor here and also offers three young Australian apprentices the opportunity to travel to France for a months work experience at his restaurant in Bordeaux.
We also continue the interview with Jean-Paul Jeunet, Chef, one of the international guests of the Melbourne Food and Wine festival. He runs his restaurant in Arbois in the Jura and this is his first visit in Australia.

Jacques Boulet speaks of the Sustainability Living Festival which will be held at Federation Square in Melbourne. He was born in Belgium and is now living in Australia and is Head at oases and an Adjunct Professor at Deakin University. There will be stands, workshops, music in this three-day program celebrating sustainable communities. Jacques Boulet also speaks of the Sustainable Living Foundation, a community based not-for-profit organisation.

Jean-Philippe Loriot is the sixth generation of wine makers - not of just any wine , but of champagne making.
We all know that Champagne can only come from one region -CHAMPAGNE and the rest is bubbly.
He retraces his family history and the reason why he was in Australia. It is his second visit.
He speaks about his family, the bond with the land over generations of wine makers, the gradual changes in the vinification process and finally the art which is wine making.
In Australia, two champagne dinners were organised to present the Loriot Champagne.

Franck’s influence on modern hair styling has been acknowledged worldwide, with his ‘Balayage 2 Ors' tinting technique that has revolutionised the way hair is coloured. In France, the old method of foiling has almost completely been phased out thanks to Provost's innovation which gives a more natural, textured look. Franck was in Sydney for the official launch of his new salon.
